It's not on my meal plan for the week but this looks so good, I plan to make it soon. I think I may use pecans instead of the pine nuts, I am not a big pine nut fan.
Arugula Strawberry Salad
8 oz of arugula 1 cup fresh strawberries, hulled and sliced 1/2 cup of goat cheese, see note below 3 tablespoons toasted pine nuts 3 tablespoons poppyseed salad dressing, I prefer Brianna’s
In a small bowl, coat strawberries with poppyseed dressing. In your serving bowl, place arugula and add strawberry and poppyseed mixture. Add pinenuts and toss gently. Sprinkle with goat cheese and serve with extra dressing on the side!
* for the goat cheese, you can either use a soft, crumbled chevre or use a firmer goat cheddar and cut into cubes for this salad.
Married, stay at home mother of 3 teenagers(Ryan, Will and Brittany) and one bichon frise(Nikki). Spending 2010 cooking mindful, healthy meals and saving $$ to go to Disney World for New Years! We are spending our money thoughtfully!
I never intended to write a blog. Instead, blogging found me! On New Year's Eve 2009 my family and I were out to dinner. Discussing out goals began with let's go to Disney World for New Years next year! (We were freezing in Boston). From that it became, how do we get there? And after a holiday season of too much eating out, the logical progression became, "let's eat in"! I decided that to keep us honest I would record the year of savings... And this blog became the year we cooked our way to savings!
