Sunday seems to be evolving into soup night. Tonight Mart and Ryan took over the kitchen. Off they went to the grocery store and 4 calls later they were back with the ingredients for a hearty soup. Although we are saving a lot of money, we seem to be eating a lot of "hearty" meals. :) Due to the fact that I need to actually fit into my clothes, this week we are moving to "non-hearty fare". But tonight was the perfect night for a yummy soup. It is snowing out and we have a big roaring fire going. This is Lisa's last night here so we are all just enjoying being home. The soup was a Potato - Cheddar. The house smells wonderful due to the onion cooking and the thyme simmering in the soup. It was a big hit and everyone(except me) added hot sauce to theirs to give it a kick.
Better then anything though was not having to cook! I am loving this one day a week when I delegate planning and preparation to Mart! It is a nice break and if anyone is whining, it's not my fault!!:)
Potato Cheddar Soup (adapted from Bon Appetit)
2 Tblsp Canola Oil
1/2 cup chopped celery
1 cup chopped carrot
1/2 cup chopped onion
1/4 tsp thyme
3 tblsp flour
2 cups low salt chicken broth
2 cups 2% milk
2 medium potatoes, diced
1 cup shredded cheddar cheese
1/2 chopped ham
hot sauce(optional)
Heat oil and saute celery, carrots, onion and thyme until vegetables soften, about 5 minutes. Sprinkle flour and stir for 2 minutes. Slowly whisk in broth, then milk. Add potato and cook about 20 -30 minutes until potatoes are soft. Add cheese gradually, then ham. Season with salt, pepper and hot sauce.
This sounds so yummy! I plan to make this!
