The Antidote for Winter: Muffins

I decided to get an early start on dinner today so I could be done and not have to cook later.  It's freezing here so I thought a nice, warm, homey meal was in order.  Soup and muffins, what could be better?  Well, the Pumpkin Muffins just came out of the oven and now I am rethinking my plan to cook early.  It's possible there may be no muffins left by dinner! The house smells so good though....


These muffins are so good!  I "stole" the recipe from my friend Laurie and they are quick, easy and delicious. The golden raisins are optional but I think they add great flavor!  Enjoy!

Pumpkin Muffins


2cups flour                                                1 16oz can Pumpkin
2tsp baking powder                                   4 eggs
2 tsp cinnamon                                          1 1/2 cup sugar
1tsp baking soda                                        1 cup oil(I use Canola)
1 tsp salt                                                     Golden Raisins 1 cup

Mix dry ingredients.  Combine eggs, pumpkin,sugar and oil thoroughly.  Add dry ingredients and beat until all combined.
Fill muffin cups 2/3 full.  Bake at 350 for 20 mins.  Makes 24 muffins.

So Good!!!  Now to get the soup finished...
