Cocktail Hour?


It makes it much easier to stay home when it is absolutely freezing!  And it is mind numbing cold outside!  Fortunately for me though, Mart decided that he would make dinner tonight.  After perusing all the cookbooks he wandered off to the grocery store.  Will got an invite to a friend's house and  ran out as fast as he could. I imagine that they are wolfing down pizza and wings right about now.  Soon after the grocery store run there was a lot of clanging of pots and cabinet doors slamming.  Then, the smell of bacon wafted through the house. And as Mart says, "Everything tastes better with bacon." I knew it had to be a hearty meal. (Men like hearty.)  It was but very delicious(if you didn't think about the calorie count). Fettuccine Carbonara and Caesar Salad.  It was a big hit!

But, I have an even better husband then one who just makes dinner!  Mine broke out a book and made me a beautiful and tasty Cosmo!! Who needs a bartender when you have a husband like that ?!!!



Serves 4-5
8oz bacon(8 slices)cut  1 inch thick crosswise)
Coarse salt and pepper, to taste
1 pound pasta
3 large eggs
3/4 cup grated parmesan cheese
1/2 cup half and half

1.  Bring pot of water to boil.  In a large skillet, cook bacon until crisp.  Transfer to towel lined plate.
2.  Salt boiling water, add pasta and cook until al dente.
3.  In large bowl, whisk eggs, parmesan and half and half . Set aside.
4.  Drain Pasta, leaving some water clinging to it. Add hot pasta to egg mixture.  Add bacon, season with
     salt and pepper and toss to combine.  (the heat from the pasta will cook eggs)Serve immediately with
     extra parmesan cheese.
